    Prepare the Pretzel Dough

    In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until foamy. Add salt and flour gradually, mixing until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Pretzel Bytes

    Preheat the oven to 425°F (220°C). Punch down the risen dough and divide it into small pieces (about 1 inch each). Roll each piece into a ball.

    Boil and Bake

    In a large pot, bring 10 cups of water to a boil and stir in the baking soda. Boil the pretzel bites in batches for about 30 seconds each, then remove and place on a baking sheet lined with parchment paper. Sprinkle with coarse sea salt.

    Bake in the preheated oven for 10-12 minutes or until golden brown.

    Make the Cheese Sauce

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the milk and cook until thickened. Stir in the smoked Gouda, garlic powder, and black pepper until the cheese melts.

    Serve the pretzel bytes warm with the smoked Gouda cheese sauce for dipping.
