    Make the Cream Cheese Filling

    In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. Set aside.

    Prepare the Churro Dough

    In a saucepan, combine water and butter. Bring to a boil. Stir in flour, sugar, and salt until a dough forms. Remove from heat and let cool slightly. Beat in eggs one at a time, then stir in vanilla extract until smooth.

    Heat Oil for Frying

    In a deep pot or fryer, heat oil to 350°F (175°C).

    Pipe the Churros

    Transfer churro dough to a piping bag fitted with a star tip. Pipe 10-inch long churros into the hot oil. Fry until golden brown on both sides, about 2-3 minutes per side.

    Make Cinnamon Sugar

    In a bowl, mix granulated sugar and cinnamon together.

    Coat Churros

    Once churros are cooked, remove from oil and drain on paper towels. Roll them in the cinnamon sugar mixture while still warm.

    Using a filling tip, fill each churro with the cream cheese filling.
