Wash and scrub the russet potatoes thoroughly. Cut them into long, thin strips to create fries.

Soaking the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Preheat your oven to 425°F (220°C) to ensure that it is hot enough to crisp the fries.

Coating the Fries
Drain and rinse the soaked fries. Pat them dry with a kitchen towel. In a large bowl, toss the fries with olive oil, chopped rosemary, sea salt, and black pepper until evenly coated.

Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.
