Preparation Steps

  1. 1

    Marinate the Portobello

In a bowl, mix olive oil, soy sauce, lime juice, and garlic powder. Place the portobello mushrooms in the marinade and let them sit for at least 30 minutes.

  2. 2

    Pickle the Red Onion

Slice the red onion thinly and place it in a small bowl. Pour vinegar over the onions and let them sit for at least 15 minutes to pickle.

  3. 3

    Make the Avocado Mousse

In a blender, combine the avocado, lime juice, and salt. Blend until smooth and creamy. Adjust seasoning if necessary.

  4. 4

    Grill the Portobello

Preheat your grill to medium-high heat. Grill the marinated portobello mushrooms for 5-7 minutes on each side, or until tender and grill marks appear.

  5. 5

    Warm the Tortillas

Warm the corn tortillas on the grill or in a skillet for about 30 seconds on each side until soft and pliable.

  6. 6

    Assemble the Tacos

On each tortilla, place a grilled portobello, a dollop of avocado mousse, pickled red onions, and fresh cilantro. Serve with a side of green sauce.
