Prepare the Pork Belly
Season the pork belly with salt and black pepper. In a large skillet, cook the pork belly over medium heat until crispy and golden brown on all sides, about 15-20 minutes. Remove from heat and let it rest before slicing.

Make the Tomatillo-Chipotle Sauce
In a pot, boil the tomatillos until soft, about 10 minutes. Drain and blend them with the chipotle peppers until smooth. Add salt to taste.

Pickle the Red Onion
Thinly slice the red onion and soak it in a mixture of lime juice and a pinch of salt for at least 10 minutes.

Warm the corn tortillas on a skillet. Layer the sliced pork belly, tomatillo-chipotle sauce, a dollop of sour cream, pickled red onion, and fresh cilantro on each tortilla.
