    Marinate the Portobello

    In a bowl, combine olive oil, soy sauce, minced garlic, chili powder, cumin, and salt. Whisk together. Add the cleaned portobello mushrooms and let them marinate for at least 30 minutes.

    Pickle the Red Onions

    Thinly slice the red onion and place it in a jar. Pour vinegar over the onions, add some salt, and let them sit for at least 30 minutes to pickle.

    Prepare the Avocado Mousse

    In a blender, combine the flesh of the avocados, lime juice, and a pinch of salt. Blend until smooth and creamy. Adjust seasoning to taste.

    Grill the Portobello

    Preheat your grill or grill pan over medium-high heat. Grill the marinated portobello mushrooms for about 5-7 minutes on each side until tender and slightly charred.

    Warm the Tortillas

    In a dry skillet, warm the corn tortillas for about 30 seconds on each side until pliable.
