In a bowl, combine the buttermilk, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours (or overnight for best results).

In another bowl, mix together the flour, cayenne pepper, paprika, garlic powder, onion powder, and salt. This will be used for coating the chicken.

In a large skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Remove the chicken from the buttermilk marinade and allow excess to drip off. Dredge each piece in the flour mixture, pressing lightly to ensure an even coating.
