    Wash and peel the Russet potatoes. Cut them into long, thin strips (approximately 1/4 inch thick).

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

    After soaking, drain and rinse the potatoes. Spread them out on a clean kitchen towel or paper towels and pat them dry thoroughly.
