    Press the tofu to remove excess moisture, then cut it into bite-sized cubes.

    Sauté the Vegetables

    Heat olive oil in a wok over medium heat. Add minced garlic and ginger, sauté for about 1 minute until fragrant. Add broccoli, squash, and snap peas, and stir-fry for about 5-7 minutes until tender-crisp.

    Cook the Tofu

    In the same wok, add the cubed tofu and cook until golden brown on all sides, about 5-6 minutes.

    Add Cashews and Sauce

    Stir in the cashews and tamari sauce, and cook for an additional 2-3 minutes, ensuring everything is well coated. Drizzle sesame oil over the top.

    Season and Serve

    Season with salt and black pepper to taste. Garnish with sliced green onions before serving.
