    Cook the Noodles

    Bring a large pot of water to a boil. Add the Lo Mein noodles and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

    Add Mushrooms and Scallions

    Add the sliced mushrooms and chopped scallions to the skillet. Stir-fry for 3-4 minutes until the mushrooms are tender.

    Combine Noodles and Sauce

    Add the cooked Lo Mein noodles to the skillet. Pour in the tamari sauce and toss everything together until well combined. Season with salt and pepper to taste.

    Serve
