    Prepare the Pickled Slaw

    In a bowl, combine shredded cabbage, shredded carrot, rice vinegar, sugar, and salt. Mix well and let it sit for at least 30 minutes to pickle.

    Cook the Tofu Filling

    Press the tofu to remove excess moisture, then crumble it into a bowl. Add soy sauce, Sriracha, minced garlic, grated ginger, sesame oil, and cornstarch. Mix until fully combined. In a skillet over medium heat, cook the mixture until golden and crispy, about 10-15 minutes. Stir in chopped green onions.

    Make the Bao Buns

    In a large bowl, mix the flour, instant yeast, sugar, baking powder, and salt. Gradually add warm water, mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth. Let it rise for 1 hour or until doubled in size. Divide the dough into equal pieces, roll them out, and steam for about 10-12 minutes until fluffy.

    Assemble the Bao Buns

    Fill each steamed bao bun with a generous amount of the spicy tofu filling and top with pickled slaw. Serve warm.
