    Prepare the Tuna Mixture

    In a bowl, combine the sushi-grade tuna, soy sauce, lime juice, chili oil, salt, and pepper. Mix gently to avoid breaking up the tuna too much. Set aside.

    Prepare the Vegetables

    Slice the avocado and cucumber into thin strips. Chop the scallions and cilantro leaves finely.

    Soften the Rice Paper Wrappers

    Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until softened. Lay it flat on a clean surface.

    Assemble the Spring Rolls

    On the lower third of the rice paper, place a few strips of avocado, cucumber, a spoonful of the tuna mixture, some crispy shallots, scallions, and cilantro. Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to the top.

    Repeat and Serve

    Repeat the process with the remaining ingredients. Serve the spring rolls with additional chili ponzu or soy sauce for dipping.
