For the Tea Smoked Spare Ribs

Prepare the Marinade
In a bowl, mix hoisin sauce, brown sugar, soy sauce, rice vinegar, and salt. Reserve half for basting.

Marinate the Ribs
Coat the spare ribs in the marinade and let them marinate in the refrigerator for at least 2 hours, preferably overnight.

Prepare the Smoking Mixture
In a small bowl, combine black tea leaves, jasmine tea leaves, sugar, cinnamon stick, star anise, and a pinch of salt.

Smoke the Ribs
Using a stovetop smoker or a grill with a smoking box, add the smoking mixture and heat until fragrant. Place the marinated ribs in the smoker and cook for about 2 hours, until tender.

Baste the Ribs
During the last 30 minutes of cooking, baste the ribs with the reserved marinade.

Finish and Serve
Remove the ribs from the smoker, let them rest for 10 minutes, then slice and serve with pickled slaw.
