    Make the Dumpling Filling

    In a large bowl, combine ground pork, green onions, garlic, ginger, soy sauce, sesame oil, and salt. Mix well until all ingredients are thoroughly combined.

    Fill the Dumplings

    Take a dumpling wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges with water, fold the wrapper over to form a half-moon shape, and pinch the edges to seal. Repeat with remaining wrappers and filling.

    Prepare the Broth

    In a large pot, combine chicken broth, soy sauce, chili oil, rice vinegar, sugar, and Sichuan peppercorns. Bring to a simmer over medium heat and let it cook for about 10 minutes to allow the flavors to meld.

    Cook the Dumplings

    Bring a large pot of water to a boil. Add the dumplings in batches and cook for about 5-7 minutes or until they float to the surface and are cooked through. Remove with a slotted spoon.

    Ladle the hot chili-soy broth into bowls, add the cooked dumplings, and garnish with fresh cilantro. Serve hot.
