    Prepare the Noodles

    Cook the Lo Mein noodles according to package instructions. Drain and set aside.

    Cook the Shrimp

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp, season with salt and pepper, and stir-fry until they turn pink, about 3-4 minutes. Remove from the skillet and set aside.

    Scramble the Eggs

    In the same skillet, add another tablespoon of vegetable oil. Pour in the beaten eggs and scramble until fully cooked. Remove and set aside with the shrimp.

    Stir-Fry the Vegetables

    Add the sliced mushrooms to the skillet and stir-fry for about 2-3 minutes until they start to soften.

    Combine All Ingredients

    Add the cooked noodles, shrimp, scrambled eggs, X.O. sauce, soy sauce, and chopped scallions to the skillet. Toss everything together and stir-fry for another 2-3 minutes until heated through.

    Serve hot, garnished with additional scallions if desired.
