    Prepare the Lobster

    In a large pot of boiling salted water, cook the lobster for about 8-10 minutes or until cooked through. Remove and cool, then chop into chunks.

    Make the Curry Sauce

    In a large skillet, heat vegetable oil over medium heat. Add garlic and ginger, sautéing until fragrant. Stir in the curry powder and cook for an additional minute. Pour in the coconut milk and soy sauce, and let simmer for 5 minutes.

    Add Vegetables

    Add asparagus, broccoli, and snap peas to the skillet. Cook for about 5-7 minutes until vegetables are tender but still crisp.

    Combine Lobster and Sauce

    Gently fold the lobster chunks into the curry sauce and vegetables. Season with salt and pepper to taste. Cook for another 2-3 minutes until heated through.

    Crispy Spinach

    In a separate pan, heat a small amount of oil over medium heat. Add spinach and sauté until crispy. Remove and drain on paper towels.
