    Prepare the Butternut Squash

    Peel and dice the butternut squash into small cubes. Toss with olive oil, salt, and black pepper. Spread on a baking sheet and roast in a preheated oven at 200°C (400°F) for 25-30 minutes until tender.

    Sauté the Haricot Verts

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the haricot verts and sauté for 5-7 minutes until bright green and tender-crisp. Season with salt and black pepper.

    Cook the Maitake Mushrooms

    In the same skillet, add another tablespoon of olive oil. Add minced garlic and maitake mushrooms. Sauté for 5-6 minutes until the mushrooms are golden and tender. Season with fresh thyme.

    Cook the Sea Bass

    Season the sea bass fillets with salt and black pepper. In a separate non-stick skillet, heat a little truffle oil over medium-high heat. Cook the fillets for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily.

    Assemble the Dish

    On each plate, place a portion of roasted butternut squash, sautéed haricot verts, and maitake mushrooms. Top with the sea bass fillet and drizzle with a little more truffle oil for added flavor.
