Prepare the Filling
In a large mixing bowl, combine ground pork, minced garlic, minced ginger, soy sauce, sesame oil, chopped green onions, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Assemble the Wontons
Place a wonton wrapper on a clean surface. Spoon about 1 teaspoon of the pork filling into the center of the wrapper. Moisten the edges with water, fold the wrapper in half to create a triangle, and press to seal. To form a traditional wonton shape, bring the two corners of the triangle together and pinch to seal. Repeat with remaining wrappers and filling.

Cook the Wontons
Bring a large pot of water to a boil. Carefully drop the wontons into the boiling water and cook for about 5-7 minutes, or until they float to the surface and are cooked through. Remove with a slotted spoon and set aside.

Prepare the Serving
In a serving bowl, drizzle chili oil over the cooked wontons. Top with pickled mustard greens and fresh cilantro. Serve immediately.
