Prepare the Filling
In a mixing bowl, combine the ground pork, minced ginger, minced garlic, soy sauce, salt, and pepper. Mix thoroughly until well combined.

Assemble the Wontons
Take a wonton wrapper and place about 1 teaspoon of the pork filling in the center. Moisten the edges of the wrapper with water, fold it over to create a triangle, and press to seal. Then, bring the two corners of the triangle together and pinch to seal again. Repeat with remaining wrappers and filling.

Cook the Wontons
Bring a pot of water to a boil. Carefully add the wontons and cook for about 5-7 minutes, or until they float to the surface and are cooked through. Remove with a slotted spoon and drain.

Serve
Serve the wontons drizzled with chili oil, topped with chopped pickled mustard greens and fresh cilantro.
