    Prepare the Mushroom Filling

    In a skillet over medium heat, add a little oil and sauté the shiitake and button mushrooms, garlic, and ginger until the mushrooms are soft and any moisture has evaporated. Add the green onions, soy sauce, sesame oil, salt, and pepper. Mix well and remove from heat to cool.

    Assemble the Potstickers

    Take a wonton wrapper and place about 1 tablespoon of the mushroom filling in the center. Moisten the edges with water, fold the wrapper in half to create a triangle, and press to seal. Make sure to remove any air bubbles. Optionally, pleat the edges for a decorative finish.

    Cook the Potstickers

    In a large skillet, heat a tablespoon of oil over medium-high heat. Place the potstickers in the skillet without overcrowding. Cook for about 2-3 minutes until the bottoms are golden brown. Add a splash of water (about 1/4 cup), cover the skillet, and steam for about 5 minutes until the potstickers are cooked through.

    Serve the potstickers hot with pickled lotus root on the side and drizzle with ponzu sauce for dipping.
