1. Prepare the Filling
In a large mixing bowl, combine the lobster meat, shrimp, Thai basil, green onions, minced garlic, chili sauce, soy sauce, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
2. Assemble the Egg Rolls
Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the lobster and shrimp filling in the center of the wrapper. Fold the bottom corner over the filling, then fold the sides in and roll tightly away from you. Seal the edge with a bit of water.
3. Fry the Egg Rolls
In a deep pan or fryer, heat oil to 350°F (175°C). Carefully place the egg rolls in the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.
4. Serve
Serve the lobster egg rolls hot with extra chili sauce on the side for dipping.
