    Cook the Rice

    In a saucepan, combine jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked and water is absorbed. Remove from heat and let it sit, covered, for another 5 minutes.

    Prepare the Tofu

    While the rice is cooking, drain and press the tofu to remove excess moisture. Cut the tofu into cubes.

    Cook the Tofu

    In a non-stick skillet, heat sesame oil over medium heat. Add the tofu cubes and cook until golden brown and crispy on all sides, about 10-12 minutes.

    Make the Lemon Sauce

    In a bowl, whisk together lemon juice, soy sauce, honey (or maple syrup), minced garlic, and grated ginger. Pour the sauce over the cooked tofu and cook for an additional 2-3 minutes, stirring to coat the tofu evenly.

    Serve

    Serve the lemon sesame tofu over a bed of jasmine rice. Garnish with toasted sesame seeds and chopped green onions.
