Prepare the Tofu
Drain the firm tofu and press it to remove excess moisture. Cut it into small cubes.

Cook the Tofu
In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the tofu cubes and cook until they are golden brown on all sides. Remove the tofu from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and diced carrot, sautéing for about 2 minutes until fragrant. Then, add the peas and chopped green onions, cooking for another 2-3 minutes.

Combine Ingredients
Add the cooked rice to the skillet, followed by the cooked tofu. Pour in the soy sauce and stir to combine all the ingredients. Cook for an additional 3-4 minutes, allowing the rice to heat through.

Serve
Plate the fried rice and top with the sunny side up eggs. Garnish with pickled vegetables on the side.
