Prepare the Dough
In a large mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon. In another bowl, whisk together the milk, eggs, and vanilla extract. Melt the butter and add it to the wet ingredients. Pour the wet mixture into the dry ingredients and mix until just combined.

Shape and Fry the Doughnuts
Heat oil in a deep fryer or large pot to 350°F (175°C). Using a doughnut cutter or two round cookie cutters, cut out doughnut shapes. Carefully drop the doughnuts into the hot oil and fry for about 2-3 minutes on each side, or until golden brown. Remove and drain on paper towels.

Prepare the Fillings
While the doughnuts cool, prepare the fillings. For the seasonal fruit jam, use your favorite fruit, cook down with sugar until thickened. For the chocolate sauce, melt chocolate chips with a bit of cream over low heat. For the ginger cream cheese, mix softened cream cheese with grated ginger and powdered sugar to taste.

Assemble the Doughnuts
Once the doughnuts are cool, fill with seasonal fruit jam using a piping bag. Drizzle with chocolate sauce and serve with a side of ginger cream cheese.
