Roast the Cauliflower
Preheat the oven to 425°F (220°C). In a large mixing bowl, toss the cauliflower florets with olive oil, madras curry powder, and salt until well coated. Spread the mixture onto a baking sheet in a single layer.

Bake
Bake in the preheated oven for 25-30 minutes, or until the cauliflower is tender and lightly browned, stirring halfway through.

Prepare the Cashews
While the cauliflower is roasting, heat a small skillet over medium heat. Add the raw cashews and toast them for about 5-7 minutes, stirring frequently, until they are golden and fragrant. Remove from heat and set aside.

Serve
Once the cauliflower is done roasting, remove it from the oven and let it cool slightly. Transfer to a serving dish, sprinkle the toasted cashews on top, and garnish with chopped cilantro. Serve warm.
