    Prepare the crust

    Preheat the oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, melted butter, and salt until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then remove from the oven and let cool.

    Make the filling

    In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy. Add the sour cream and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing on low speed until just incorporated.

    Combine and bake

    Pour the cream cheese mixture over the cooled crust in the springform pan. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly.

    Cool and chill

    Turn off the oven and crack the door open, letting the cheesecake cool in the oven for about 1 hour. Remove from the oven, let it cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.
