    Prepare the filling

    In a large skillet, heat sesame oil over medium heat. Add minced garlic and sauté until fragrant. Add the minced chicken and shrimp, cooking until the chicken is cooked through and the shrimp are pink. Stir in grated carrot, shredded cabbage, and chopped green onions. Add soy sauce, salt, and black pepper. Cook for an additional 3-5 minutes until vegetables are slightly tender. Remove from heat and let cool.

    Wrap the spring rolls

    Lay a spring roll wrapper on a clean surface with one corner facing you. Place about 2 tablespoons of the filling at the corner closest to you. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the top corner with a little water.

    Fry the spring rolls

    In a deep pan or fryer, heat oil over medium-high heat. Fry the spring rolls in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

    Serve hot with a dipping sauce of your choice, such as sweet chili sauce or soy sauce.
