Prep the Ingredients

Finely chop the lemongrass, Thai chilies, scallions, and Thai basil. In a mixing bowl, combine the chopped ingredients with fish sauce, lime juice, toasted rice powder, salt, and black pepper.

Marinate the Catfish

Place the catfish fillets in the mixing bowl with the marinade and allow them to soak for at least 30 minutes.

Prepare Banana Leaves

Soften the banana leaves by briefly passing them over an open flame or boiling water. This makes them pliable for wrapping.

Assemble the Mok Pla

Lay a piece of banana leaf flat, place a marinated catfish fillet in the center, and top with extra marinade and a few basil leaves. Fold the banana leaf over the fish to create a sealed packet.

Grill the Fish

Preheat the grill to medium heat. Place the banana leaf packets on the grill and cook for about 15-20 minutes, flipping halfway through, until the fish is cooked through.

Serve

Remove the packets from the grill, carefully unwrap the banana leaves, and serve hot with a side of steamed rice.
