Prepare the Brisket

Trim excess fat from the brisket and cut it into cubes (about 1-2 inches).

In a bowl, mix salt, black pepper, garlic powder, onion powder, paprika, and brown sugar. Rub this mixture all over the brisket cubes.

Smoke the Brisket

Preheat your smoker to 225°F (107°C). Place the brisket cubes in the smoker and smoke for 4-5 hours until they reach an internal temperature of 190°F (88°C).

In a saucepan, combine soy sauce, Thai chili paste, honey, rice vinegar, and sesame oil. Heat over medium heat until combined and slightly thickened, about 5 minutes.

Finish the Burnt Ends

Once the brisket cubes are smoked, toss them in the prepared sauce and place them back on the smoker for an additional 30-45 minutes.

Remove the burnt ends from the smoker and let them rest for 10 minutes. Serve hot.
