Prepare the Ingredients
Soak the flat rice noodles in hot water for about 10-15 minutes or until softened. Drain and set aside. Chop the onion, bell pepper, and serrano pepper. Mince the garlic. Cut the Chinese broccoli into bite-sized pieces.
Cook the Vegetables
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Add the onion, bell pepper, and serrano pepper, and stir-fry for 2-3 minutes until they start to soften.
Add Pork and Noodles
Stir in the pulled pork and cook for an additional 2 minutes. Then, add the soaked rice noodles and Chinese broccoli. Pour in the black soy sauce and toss everything together until well combined and heated through.
Finish with Thai Basil
Remove the skillet from heat and stir in the Thai basil leaves. Season with salt and pepper to taste. Serve hot.
