Chive Cake Preparation

Prepare the Batter

In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt. In another bowl, beat the eggs, then add milk and vegetable oil. Stir in the chopped chives. Combine the wet and dry ingredients and mix until just combined.

Cook the Cake

Preheat a non-stick skillet over medium heat. Pour a ladle of batter into the skillet, forming small pancakes. Cook for about 3-4 minutes on each side or until golden brown. Repeat until all the batter is cooked.

Prepare the Vinaigrette

In a small bowl, mix together soy sauce, rice vinegar, and a pinch of chili flakes to make the spicy soy vinaigrette.

Serve

Stack the chive cakes on a serving plate. Drizzle with spicy soy vinaigrette, and garnish with fried onions and chopped cilantro.
