Brisket Preparation

Prepare the Brine

In a large pot, combine water, kosher salt, brown sugar, black peppercorns, garlic cloves, mustard seeds, bay leaves, allspice berries, coriander seeds, cinnamon stick, and whole cloves. Bring to a boil, stirring until the salt and sugar dissolve. Remove from heat and let cool completely.

Brine the Brisket

Once the brine is cool, submerge the brisket in the brine, ensuring it is completely covered. Transfer to a large container or a resealable bag, seal tightly, and refrigerate for 72 hours.

Cooking the Brisket

After 72 hours, remove the brisket from the brine, pat dry with paper towels. Preheat your smoker or oven to 225°F (107°C). Place the brisket on the grill or in a roasting pan and cook for approximately 6-8 hours or until the internal temperature reaches 195°F (90°C) for tender results.

Resting and Serving

Once cooked, remove the brisket from the heat and let it rest for at least 30 minutes before slicing. Serve with your favorite sides.
