A half slab Baby Back ribs, half a smoked chicken, and half pound each of Brisket, heavenly pork, Thai sausage, pork belly, brisket burnt ends (GF). Served with BBQ sauce, tiger cry sauce, pickles, pineapple fried rice, slaw, baked beans and mac & cheese. Recommended 4-6 people.

Prepare the Meats

Preheat your smoker or grill to 225°F (107°C). Season the baby back ribs, chicken, brisket, heavenly pork, Thai sausage, and pork belly with your preferred dry rub.

Cooking the Ribs and Chicken

Place the seasoned ribs and chicken on the smoker. Smoke the ribs for about 4-5 hours until tender and fully cooked. The chicken should be smoked for about 3-4 hours until the internal temperature reaches 165°F (74°C).

Cooking the Brisket and Pork

Once the ribs and chicken are done, smoke the brisket, heavenly pork, and pork belly for about 6-8 hours, or until they reach the desired tenderness. Use a meat thermometer to check for doneness.

Prepare the Sides

While the meats are cooking, prepare the sides. Cook the pineapple fried rice, coleslaw, baked beans, and mac & cheese according to their respective recipes.

Serve

Once everything is cooked, slice the meats and arrange them on a large platter. Serve with BBQ sauce, tiger cry sauce, pickles, and the prepared sides.
