    Prepare the Hens

    Preheat your oven to 375°F (190°C). Rinse the Cornish hens under cold water and pat them dry with paper towels. Rub the olive oil all over the hens, then season generously with sea salt, black pepper, minced garlic, and fresh thyme.

    Roast the Hens

    Place the seasoned Cornish hens breast side up in a roasting pan. Roast in the preheated oven for about 50-60 minutes or until the internal temperature reaches 165°F (74°C). Baste the hens with their own juices halfway through cooking.

    Prepare the Asparagus

    While the hens are roasting, toss the trimmed asparagus in a bowl with olive oil, salt, and pepper. Spread on a baking sheet and roast in the oven for the last 15-20 minutes of the hen's cooking time.

    Make the Truffle Dressing

    In a small bowl, mix the black truffle oil with a pinch of salt and pepper. This will be used to drizzle over the dish before serving.

    Serve

    Once the hens are cooked and the asparagus is tender, remove from the oven. Let the hens rest for 10 minutes before carving. Serve with wild game hen consume and drizzle the truffle dressing over the hens and asparagus.
