    Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.

    In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and mix until well combined. Add the sour cream, lime juice, lime zest, and vanilla extract. Mix until smooth. Add the eggs one at a time, mixing well after each addition. Gently fold in the chopped pistachios.
