    Prepare the Asparagus

    Trim the ends of the asparagus and blanch in boiling salted water for 2-3 minutes until bright green. Drain and set aside.

    Cook the Mushrooms

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sliced mushrooms. Sauté until the mushrooms are browned and tender, about 5-7 minutes. Season with salt and pepper.

    Sear the Filet Mignon

    Season the filet mignon steaks with salt and black pepper. In the same skillet, add the remaining tablespoon of olive oil. Sear the steaks over medium-high heat for 4-5 minutes on each side for medium-rare, or to your desired doneness.

    Add Gorgonzola

    During the last minute of cooking, place the Gorgonzola cheese on top of the steaks and cover the skillet to allow the cheese to melt.

    Plate the Dish

    On each plate, arrange the blanched asparagus next to the filet mignon. Spoon the sautéed mushrooms on top of the steak and drizzle with demi-glace.
