Steak Preparation

Grill the Steak

Season the New York strip steak with salt and pepper. Preheat a grill or grill pan over medium-high heat. Grill the steak for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from grill and let rest for 5 minutes before slicing.

Cheddar Grit Cake

Cook the Grits

In a medium saucepan, bring 4 cups of water to a boil. Stir in the grits and salt. Reduce heat to low and cook, stirring occasionally, for about 20-25 minutes until thickened.

Add Cheese and Egg

Once the grits are cooked, stir in the cheddar cheese, diced jalapeño, beaten egg, and pepper. Mix well until combined.

Prepare the Grit Cake

Pour the grit mixture into a greased baking dish and smooth the top. Refrigerate for at least 1 hour to firm up. Once firm, cut into squares.

Fry the Grit Cakes

Heat a non-stick skillet over medium heat and add a little oil. Fry each grit square until golden brown on both sides, about 3-4 minutes per side.

Asparagus and Cajun Butter

Cook the Asparagus

In the same skillet used for the grit cakes, add the trimmed asparagus. Sauté for 3-4 minutes until tender and bright green. Season with salt and pepper.

Make Cajun Butter

In a small bowl, mix the softened butter with Cajun seasoning until well combined.

Assembly

Plate the Dish

On a serving plate, place a grit cake, top with the grilled New York strip steak, and arrange the sautéed asparagus alongside. Finish with a dollop of Cajun butter on top of the steak.
