Cake Preparation
Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt until well combined.
Combine Wet and Dry Mixtures
Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
Add Nuts and Coconut
Fold in the chopped pecans and toasted coconut flakes gently into the batter.
Bake the Cake
Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Cool the Cakes
Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring to wire racks to cool completely.
Frosting Preparation
Prepare the Frosting
In a large mixing bowl, beat together the softened cream cheese and butter until creamy and smooth.
Add Sugar and Vanilla
Gradually add the powdered sugar, mixing well until combined. Stir in the vanilla extract.
Frost the Cake
Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of frosting on top, then place the second layer on top. Frost the top and sides of the cake.
Garnish
Optional: Sprinkle additional toasted coconut and chopped pecans on top of the frosted cake for decoration.
