Roasted Chicken and Vegetables
Prepare the Chicken
Preheat your oven to 375°F (190°C). Rinse the whole chicken under cold water and pat it dry with paper towels. Rub it with olive oil, salt, black pepper, thyme, and rosemary.
Make the Broth
Once the chicken is cooked, remove it from the oven and let it rest. Transfer the roasted vegetables to a large pot. Pour in the chicken broth, bring to a simmer, and let it cook while you prepare the dumplings.
Dumplings
Prepare the Dumpling Mixture
In a mixing bowl, combine the all-purpose flour, baking powder, and salt. In another bowl, whisk together the milk and egg. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped parsley.
Cook the Dumplings
Once the broth is simmering, drop spoonfuls of the dumpling mixture into the pot. Cover and cook for about 15 minutes, or until the dumplings are fluffy and cooked through.
Petite Bubba Salad
Assemble the Salad
In a large bowl, combine the mixed greens, halved cherry tomatoes, and diced cucumber. Drizzle with olive oil and balsamic vinegar, then season with salt and black pepper to taste. Toss gently to combine.
Serving
Serve the Dish
Shred the roasted chicken and add it to the pot with broth and vegetables. Serve hot alongside the dumplings and petite Bubba salad.
