Broth Preparation

Prepare the Broth
In a large pot, combine vegetable broth, sliced ginger, minced garlic, star anise, cinnamon stick, soy sauce, lime juice, salt, and black peppercorns. Bring the mixture to a boil over medium-high heat.

Simmer the Broth
Once boiling, reduce the heat to low and let the broth simmer for about 30 minutes. This allows the flavors to meld together.

Strain the Broth
After 30 minutes, remove the pot from heat and strain the broth through a fine sieve to remove the solids. Return the clear broth to the pot and keep warm.
Vegetable Preparation

Prepare the Vegetables
While the broth is simmering, wash and prepare the vegetables. Julienne the carrots, slice the red bell pepper and mushrooms, and chop the green onions and cilantro.

Cook the Vegetables
In a separate pan, lightly sauté the carrots, red bell pepper, mushrooms, and snow peas for about 5 minutes, just until they start to soften. Set aside.
Noodle Preparation

Cook the Rice Noodles
In a pot of boiling water, cook the rice noodles according to package instructions until tender. Drain and rinse under cold water to stop cooking. Set aside.
Assembly

Assemble the Pho
In bowls, divide the cooked rice noodles, sautéed vegetables, and pour the warm broth over the top. Garnish with chopped green onions and fresh cilantro.
