Preparing the Dough

    Process the Prawn Meat

    Place the prawn meat in a food processor and blend until a smooth paste forms.

    In a mixing bowl, combine the prawn paste, tapioca flour, water, salt, sugar, and white pepper. Mix thoroughly until a consistent dough forms.

    Shape the Dough

    Transfer the dough to a clean surface and knead it for about 5 minutes until it becomes smooth and elastic.

    Form into Logs

    Shape the dough into small logs, approximately 1-2 inches in diameter, and wrap each log tightly in plastic wrap.

    Steam the Logs

    Place the wrapped logs in a steamer and steam for about 30 minutes until they are firm and cooked through.

    Remove the logs from the steamer, let them cool, and then slice them into thin discs (about 2-3mm thick).
