Broth Preparation

    Make the Broth

    In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1-2 minutes.

    Combine Ingredients

    Pour in the chicken or pork broth, soy sauce, miso paste, and chili paste, stirring to combine. Bring the mixture to a simmer and let it cook for 15-20 minutes, allowing the flavors to meld.

Noodle Cooking

    Cook Ramen Noodles

    While the broth is simmering, bring a separate pot of water to a boil. Cook the ramen noodles according to package instructions until al dente, usually about 3-4 minutes. Drain and set aside.

Topping Preparation

    Prepare Bok Choy

    In the same pot used for the noodles, blanch the bok choy in boiling water for about 1 minute until bright green. Remove and set aside.

    Prepare Soft Boiled Eggs

    In a small saucepan, bring water to a boil. Gently lower the eggs into the water and boil for 6-7 minutes for a soft yolk. Transfer the eggs to an ice bath to cool, then peel and slice in half.

    Prepare Soy Glazed Chicken or Pork Belly

    If using chicken or pork belly, glaze with soy sauce and pan-fry or grill until cooked through and caramelized. Slice into bite-sized pieces.

Assembly

    Assemble Ramen Bowls

    In a serving bowl, place a portion of ramen noodles, ladle the hot broth over them, and arrange the bok choy, kimchi, soft boiled egg halves, sliced scallions, and soy glazed chicken or pork belly on top.

    Garnish with additional scallions if desired, and serve hot with chopsticks and a spoon.
