Prepare the Dough
In a large bowl, combine all-purpose flour and salt. Gradually add boiling water while stirring with a fork until the mixture starts to come together. Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth. Cover with a damp cloth and let it rest for 30 minutes.

Make the Filling
In a mixing bowl, combine ground pork, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, red pepper flakes, and salt. Mix well until all ingredients are evenly incorporated.

Prepare the Ginger Sauce
In a small bowl, whisk together soy sauce, rice vinegar, grated ginger, honey, and sesame oil until smooth. Set aside.
Assembling and Cooking

Assemble the Dumplings
After the dough has rested, divide it into small pieces (about 1 inch in size). Roll each piece into a thin circle. Place a teaspoon of filling in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal tightly.

Cook the Dumplings
Bring a large pot of water to a boil. Carefully drop dumplings into the boiling water, making sure not to overcrowd the pot. Cook for about 5-7 minutes or until the dumplings float to the surface and are cooked through. Remove with a slotted spoon.
