    Prepare the Chicken

    Rinse the whole chicken under cold water to clean it. Remove any giblets from the cavity and pat the chicken dry with paper towels.

    Chop Vegetables

    Peel and chop the carrots into 1-inch pieces. Chop the celery into 1-inch pieces as well. Cut the onion into quarters and crush the garlic cloves with the flat side of a knife.

    Combine Ingredients

    In a large stockpot, add the rinsed chicken, water, chopped carrots, celery, onion, garlic, bay leaves, thyme, salt, and black peppercorns.

    Heat and Simmer

    Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and cover the pot. Allow the broth to simmer gently for about 2 to 2.5 hours.

    Skim Foam

    During the first 30 minutes of simmering, skim off any foam that rises to the surface using a ladle or spoon.

    Remove Chicken

    After 2 to 2.5 hours, carefully remove the chicken from the pot and set it aside to cool. Once cooled, shred the meat from the bones for another use, if desired.

    Strain the Broth

    Strain the broth through a fine mesh sieve or cheesecloth into another pot to remove the solids. Discard the solids and retain the liquid broth.

    Final Seasoning

    Taste the broth and adjust the seasoning with more salt if necessary. If using fresh parsley, add it now for extra flavor.
