Preparation
- 1
Prepare the Ingredients
Begin by rinsing the beef bones under cold water to remove any impurities. Pat them dry with paper towels.
- 2
Chop Vegetables
Chop the carrots and celery into bite-sized pieces. Quarter the onion and keep the garlic cloves whole, as they will add flavor but not need to be minced.
Cooking
- 3
Add Ingredients to Pot
In a large stock pot, place the beef bones, chopped carrots, chopped celery, quartered onion, whole garlic cloves, bay leaves, thyme, peppercorns, and salt.
- 4
Add Water
Pour 4 quarts of cold water into the pot, ensuring all ingredients are submerged.
- 5
Bring to a Boil
Place the pot over high heat and bring the mixture to a boil. Once boiling, reduce the heat to a gentle simmer.
- 6
Simmer the Broth
Cover the pot partially and let the broth simmer for at least 4 hours. For a richer flavor, you can simmer for up to 12 hours. Check occasionally and skim off any foam that rises to the surface.
- 7
Strain the Broth
After simmering, remove the pot from heat. Using a fine-mesh strainer or cheesecloth, strain the broth into another pot or large bowl, discarding the solids.
- 8
Cool and Store
Allow the broth to cool at room temperature before transferring it to containers. Store in the refrigerator for up to a week or freeze for longer storage.
