Preparing the Broth

Prepare the Chicken
In a large pot, place the whole chicken and cover it with 12 cups of water. Bring to a boil over high heat.

Simmer the Broth
Cover the pot and let the broth simmer for about 1 hour or until the chicken is cooked through.

Season the Broth
Remove the chicken from the pot. Add fish sauce and salt to taste. Strain the broth to remove solids and keep it warm.
Preparing the Noodles and Toppings

Cook the Noodles
In a separate pot, bring water to a boil. Add the rice noodles and cook according to package instructions, usually about 5-7 minutes. Drain and set aside.

Prepare Fresh Toppings
While the noodles are cooking, rinse the bean sprouts, and chop the green onions. Slice the lime into wedges and the jalapeño or Thai chili.

Shred the Chicken
Once the chicken has cooled slightly, shred the meat into bite-sized pieces.
Serving the Pho

Assemble the Bowls
In serving bowls, place a portion of the cooked rice noodles, followed by shredded chicken, and ladle the hot broth over the top.

Add Toppings
Top each bowl with bean sprouts, fresh basil, green onions, lime wedges, and sliced jalapeño or Thai chili.
