Preparation

Prepare the Noodles
Soak the rice noodles in warm water for about 30 minutes until they are soft. Drain and set aside.

Prepare the Sauce
In a small bowl, mix together fish sauce, tamarind paste, sugar, soy sauce, and chili powder. Stir until well combined and set aside.
Cooking

Cook the Protein
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add shrimp and cook until pink, about 2-3 minutes. Remove shrimp and set aside.

Cook the Tofu
In the same skillet, add another tablespoon of oil if needed, and add the cubed tofu. Fry until golden brown on all sides, about 5-7 minutes. Remove tofu and set aside.

Sauté Vegetables
Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Then add the green onions and cook for another minute.

Combine Everything
Add the drained rice noodles to the skillet along with the shrimp, tofu, and bean sprouts. Pour the sauce over the top and toss everything together, cooking for an additional 2-3 minutes until heated through.
Serving

Garnish and Serve
Plate the Pad Thai and garnish with crushed peanuts, fresh cilantro, and lime wedges. Serve immediately.
