    Prepare the Ingredients

    Slice the chicken breast into bite-sized pieces. Chop the bell pepper, zucchini, and carrots into thin strips. Set aside.

    Cook the Chicken

    In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the sliced chicken and cook until browned and fully cooked, about 5-7 minutes. Remove from the skillet and set aside.

    Make the Curry Base

    In the same skillet, add the green curry paste and cook for 1-2 minutes until fragrant. Stir in the coconut milk and vegetable broth, bringing the mixture to a gentle simmer.

    Add Vegetables

    Add the prepared bell pepper, zucchini, and carrots to the skillet. Simmer for 5-10 minutes until the vegetables are tender but still crisp.

    Combine and Season

    Return the cooked chicken to the skillet. Stir in the fish sauce, brown sugar, lime juice, salt, and black pepper. Cook for an additional 2-3 minutes until everything is heated through.

    Remove from heat and stir in the fresh basil leaves. Adjust seasoning as needed.
