Preparation of Ingredients

Cook the Shrimp
In a pot of boiling water, add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Drain and let cool.

Prepare Rice Noodles
In a separate pot, boil water and add rice noodles. Cook according to package instructions (usually about 4-5 minutes). Drain and rinse under cold water to stop the cooking process.

Slice the Cucumber
Peel the cucumber and slice it into thin strips or julienne.

Prepare Lettuce and Basil
Wash the lettuce leaves and pat them dry. Rinse the fresh basil leaves and set aside.
Making the Peanut Sauce

Mix Peanut Sauce Ingredients
In a small bowl, combine the peanut butter, soy sauce, lime juice, honey, water, minced garlic, and chili flakes. Stir well until smooth and adjust the consistency with more water if needed.
Assembling the Summer Rolls

Soak Rice Paper
Fill a shallow dish with warm water. Dip one rice paper sheet into the water for about 10-15 seconds until it softens.

Fill the Rice Paper
Place the softened rice paper on a clean surface. In the center, add a small amount of the cooked shrimp, a handful of rice noodles, cucumber strips, a lettuce leaf, and a few basil leaves.

Roll the Summer Roll
Fold the sides of the rice paper over the filling, then roll from the bottom up tightly to form a roll. Repeat with remaining ingredients.

Serve with Peanut Sauce
Serve the fresh summer rolls with the peanut sauce on the side for dipping.
