Method

Bao Dough Preparation

  1. 1

    Mix Dry Ingredients

In a mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

  2. 2

    Activate Yeast

In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until frothy.

  3. 3

    Combine Ingredients

Add the activated yeast and vegetable oil to the dry ingredients, and mix until a dough forms.

  4. 4

    Knead the Dough

Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth. Cover with a damp cloth and let it rise for 1 hour.

Korean Chicken Filling Preparation

  1. 5

    Prepare Chicken Marinade

In a bowl, combine soy sauce, gochujang, minced garlic, minced ginger, and sesame oil. Mix well.

  2. 6

    Marinate Chicken

Add the chicken thighs to the marinade, ensuring they are fully coated. Let them marinate for at least 30 minutes.

  3. 7

    Cook Chicken

Heat a skillet over medium-high heat and add the marinated chicken. Cook for about 6-8 minutes on each side until fully cooked. Remove from heat and shred the chicken.

  4. 8

    Thicken the Sauce

In the same skillet, add cornstarch mixed with a little water to the remaining sauce and cook until thickened. Add the shredded chicken back into the skillet and toss to coat.

  5. 9

    Finish Filling

Add sliced green onions and toasted sesame seeds to the chicken mixture, stirring to combine.

Pickled Vegetables Preparation

  1. 10

    Prepare Pickling Liquid

In a bowl, mix rice vinegar, sugar, and salt until the sugar dissolves.

  2. 11

    Pickle Vegetables

Add the julienned carrots and cucumbers to the pickling liquid and let them sit for at least 20 minutes.

Assemble and Steam Bao

  1. 12

    Shape Bao Buns

After the dough has risen, divide it into equal portions and shape each portion into a small circle.

  2. 13

    Fill Bao Buns

Place a spoonful of the Korean chicken filling in the center of each dough circle and fold the dough over, pinching the edges to seal.

  3. 14

    Steam Bao

Place the filled bao buns in a steamer lined with parchment paper. Steam for about 15-20 minutes until fluffy and cooked through.
